Bakery workshops, step by step
Little new thing in 2024... I suggest you learn baking step by step in 10 sessions.
These will be divided into 2 modules (5 sessions per module), bookable separately.
Each session will include 4 evening classes on Friday (6:00 p.m. to 10:00 p.m.) and will end with a full-day session on a Sunday (10:00 a.m. to 5:00 p.m.).
The price per module is €480. A reduction of €50 is offered for booking the 2 modules (Promo code: BOU2024)
The price includes: all equipment, all raw materials, recipes, water, coffee, snacks and also Sunday lunch.

Bakery step by step – module 1 (April to May)
April 5:
Theory (the different types of flour, the stages of breadmaking, the base temperature of the bread, use and storage of leaven, etc.)
Making a sourdough starter
Making a basic bread
Making leavened puff pastry / Making pain au chocolat and croissants (these will be stuck in the freezer until the 2nd session)
April 19:
Proofing and baking pain au chocolat and croissants
Making sourdough bread
Making the pastry cream
Making a leavened puff pastry / Shaping the snails and New York Rolls (these will be stuck in the freezer until the 3rd session)
April 26:
Growing and cooking the snails / New York Rolls
Making rye bread
Making a chocolate ganache
Making a classic puff pastry (this will be kept in the freezer until the 4th session)
May 10:
Making an applesauce
Making apple turnovers and sugar palms
Making a cramique and a cracker
Making an inverted puff pastry (this will be kept in the fridge until the 5th session)
May 12:
Making a pastry cream
Making an almond cream
Making a frangipane cream
Making a king cake
Making traditional baguettes
Making sandwich bread
